We chatted with ‘Leafage to get the scoop on what the restaurant is all about and what exactly everyone is talking about with these “SuperFoods” these days.
Q. How did ‘Leafage get started?
A: I’ve been a consumer of “SuperFoods” like chia seeds, flax, maca, kale, bee pollen, quinoa, cacao and nut milks for years and felt that the midtown market on Seamless was ready for these ingredients in their daily delivery.
While these ingredients are traditionally found in smoothies, we incorporated them into our salads and items such as “Flaxseed & Quinoa Crusted Salmon” and “Quintucky Fried Chicken” (quinoa-flour fried chicken) are two of our best selling items
Q: You’ve said your menu was built on a foundation of SuperFood ingredients. Can you tell us a little more about what that means? What makes a food a Superfood?
A: Superfoods are typically vegetarian or vegan and are always nutrient dense, loaded with enzymes and vitamins and low in calories. Many have become mainstream only recently such as quinoa and kale while others have been popular for several years such as salmon and avocado.
Another key to “Superfoods” is their method of preparation. Cooking, processing, or adding preservatives to anything healthy dramatically reduces the value it has to your body. So we have been diligent in incorporating Superfoods in their raw, unprocessed state as often as possible on our menu. The juices, smoothies and salads on the ‘Leafage menu reflect this.
Q: ‘Leafage’s salads are pretty unique – what was the inspiration behind them?
A: We decided that salads available for delivery needed to be more innovative and contemporary. We found there was a huge gap between what salads are available at a modest sit down restaurant in Manhattan and what was available for delivery. So, we added duck breast, seared (rare) tuna steak, and quinoa flour fried chicken as protein options.
Then we decided that salad concepts we really slacking on the salmon options and typically offered only canned salmon salad, so we decided to offer a few different types of salmon as fillet. Our Shiitake Salmon and Flaxseed & Quinoa Crusted Salmon have been a big hit.
We also decided to make a firm stand on our sourcing practices and exclusively use FreeBird brand cage-free chicken and Cedar River Farms natural beef.
